Oatmeal Cookie Gluten-Free Vegan Apple Crisp: Savor Fall Produce
Apples are everywhere in the fall…at the market, the local farmstand and on the table! In fact, October is National Apple Month, celebrating this classic fall fruit.
These crunchy, crisp fruit are delicious raw as a simple snack with some nut or seed butter or cooked into a variety of savory and sweet treats! With over 2,5000 varieties of apples in North America alone and over 7,5000 kinds grown worldwide, you have plenty of options to choose from!
Opt for organically-grown varieties to avoid the high levels of pesticides, herbicides and wax coatings commonly found on conventionally-grown apples. The Environmental Working Group analyzed USDA data and found up to 48 different pesticides on 98% of washed conventional apples.
Look for apples that are heavy for their size and firm. Store apples in a cool, dark place. As apples age, they emit ethylene gas which accelerates the ripening process and can rot other produce stored nearby.
My Oatmeal Cookie Apple Crisp is a simple, easy-to-prepare treat that highlights the sweetness of this fruit. The mild sweetness of the coconut sugar allows the natural apple sweetness to shine through without a lot of added sugar. You could easily toss in some chopped nuts or seeds to add some extra crunch and healthy fats into the topping. Try this vegan and gluten-free recipe for a healthy dessert or snack or even a fun fall breakfast!
