The cold has arrived with the New Year and, for me, that means comforting soups, warm socks, and hot beverages! Hot chocolate is synonymous with cozy warm comfort and fun winter memories.

We had our first snow of the season this week, and it was the perfect time to prepare some creamy vegan hot chocolate to warm up after a cold walk outside. This one is vegan, gluten-free, sugar-free and comes together in just a few minutes! My 2-Minute Immune-Boosting Creamy Vegan Hot Chocolate is the perfect healthy treat to enjoy as you curl up with a good book, catch up on inspirational YouTube videos, set your intentions for the New Year or dig into a powerful life-transforming online group coaching program or ecourse.

Unfortunately, many packaged hot chocolate mixes or fancy prepared drinks are packed with sugars, hydrogenated oils, processed dairy, high fructose corn syrup and artificial flavors. You don’t have to load up on chemicals and sugars to enjoy a warming mug of delicious creamy hot chocolate in a pinch!
The secret to this perfect creamy and decadent mug of hot chocolate that doesn’t sacrifice your health is coconut butter! Coconut butter provides satisfying healthy fats and a rich creamy texture without added dairy. I have been loving the versatility of coconut butter for cooking, and recently featured it as a flour alternative in my Vegan Grain-Free Cranberry Cookies!
Coconut butter (also known as coconut manna) is made from finely ground coconut meat which has a consistency similar to nut butter. It is not the same thing as coconut oil, coconut cream or vegan butter made with coconut oil, so be sure to use unrefined, organic coconut butter or manna for the best results. The coconut butter provides natural smooth creaminess and a subtle coconutty flavor.
I used culinary coconut milk, but you can use your favorite plant-based non-dairy option like my homemade hemp milk as the perfect base of this creamy drink! This simple non-dairy option adds healthy fats and satisfying protein without any added thickeners or emulsifiers.
In small quantities, cacao can be a healthy treat for most people. Cacao beans are antioxidant-rich superfoods which boost energy, focus and alertness. Many of these antioxidants are flavonoids like anthocyanidin which prevent free radical damage and boost collagen production for healthy skin, hair and nails. Cacao also promotes mood-boosting neurotransmitters like endorphins and serotonin.
Since we can all use an immune-boost to stay healthy during the winter season, I added organic medicinal mushroom powder to this beverage. Different types of mushrooms show promise to help balance immunity, quell inflammation, balance blood sugar and even fight cancer. Many varieties are potent adaptogens which help the body to adapt to the various stressors of life.
2-Minute Immune-Boosting Creamy Vegan Hot Chocolate
Ingredients
- 1 cup coconut milk full fat or culinary
- 1 heaping Tbsp coconut butter
- 1 Tbsp cacao or cocoa powder
- 1/2 tsp organic mushroom powder
- 12-15 drops liquid vanilla stevia to taste or a small spoonful of other liquid sweetener
Instructions
- Gently warm coconut milk and add all ingredients to a mug. Stir or whisk well to dissolve. Enjoy warm!
