This Pretty in Pink Apple Beet Wild Rice Salad in Lettuce Boats is perfect for a light luncheon dish or as an appetizer. I also enjoy this energizing but not overly heavy option as a pre- or post-workout snack. Whenever you enjoy it, it will add a beautiful pop color and lovely presentation to your table!
I was inspired to develop this Beet Wild Rice Salad recipe by the gorgeous fresh spring beets and spectacular heads of butter lettuce at the farmer’s market recently. There is nothing like farm-fresh, locally grown, gorgeous produce to inspire some kitchen creativity!
Lettuce boats are one of my favorite ways to pack in more greens for a low-carb, light meal. You can use any large leaves of lettuce or even kale or collard greens for an edible bowl base of your salad.
Packed with plant-based nutrition, this Pretty in Pink Apple Beet Wild Rice Salad in Lettuce Boats recipe is allergy-friendly and works within a variety of dietary approaches. It is Gluten-Free, Vegan, Vegetarian, Plant-Based, Nut-Free, Soy-Free, Sugar-Free, Egg-Free, Dairy-Free and healthy.
Beet roots contain a wealth of nutrients that support your health. They are a unique source of betaine, an anti-inflammatory phytonutrient which helps protect the body from free-radical damage and environmental stress. Beets also contain natural nitrates that are converted into nitric oxide in the body. This substance can help lower blood pressure by relaxing and dilating the blood vessels while also boosting stamina by reducing the oxygen cost of exercise.
To save time, you can roast your beets ahead of time and store in the fridge until you are ready to prepare the dish.
Pretty in Pink Apple Beet Wild Rice Salad in Lettuce Boats
Ingredients
- 1 cup wild rice cooked according to package instructions
- 1 cup shredded apple about 1 medium apple
- 1 cup shredded roasted beets about 5 small or 3 medium beets
- 1 pinch of cumin
- 1/4 tsp Ceylon cinnamon
- Salt & pepper to taste
- 4 large lettuce leaves washed and dried
Instructions
- Roast whole beets (with skin intact) at 375F until tender. Cool.
- Prepare wild rice according to package instructions for 1 cup total of cooked rice.
- Wash, slice into quarters and core apple with skin intact. Shred using a box grater or food processor for 1 cup total of shredded apples.
- Shred cooled roasted beets with box grater or food processor for 1 cup total shredded beets.
- Mix rice, apples, beets, cumin and cinnamon in a medium sized bowl. Season with salt and pepper to taste.
- Place washed and dried lettuce leaf bowls onto serving platter. Spoon about 3/4 cup of rice, apple, beet mixture onto each lettuce bowl and enjoy!
