There are so many food holidays around, but National Chocolate Pudding Day (coming up on June 26th!) has to be one of the most delicious!
Pudding is a creamy, smooth snack or decadent dessert beloved by children and adults alike. This year, celebrate by going beyond the traditional milk, sugar and cornstarch laden recipe and try this nourishing, simple, vegan, gluten-free Black Forest Silky Chocolate Chia Pudding!
Simple and Quick Chocolate Chia Pudding with Superfood Nutrition!
This recipe is quick to throw together in a few minutes and only requires a few real-food ingredients to create a delicious snack! It’s rich, creaminess satisfies your cravings for chocolate pudding while also packing in some quality nutrition and extra superfoods.
It provides protein, iron, calcium, omega-3 fatty acids and fiber, thanks to chia seeds as well as extra anti-oxidants, vitamin C and flavonids from cherries and acerola berry.
To make this recipe extra special, I combine the rich chocolatey cacao with tart cherry for flavors reminiscent of a Black Forest cake. The tart cherry flavor comes from the soaked and blended dried cherries (you can also use fresh if available and adjust liquid as needed) with acerola berry powder for an additional tart cherry flavor and superfood boost! The combination of vitamin C and other antioxidants in acerola make it valuable for fighting free-radical damage in the body and reducing inflammation.
Black Forest Chocolate Chia Pudding {Vegan, Gluten-Free, Soy-Free, Nut-Free, Sugar-Free}
Ingredients
- 1 1/4 cups unsweetened coconut or hempseed milk homemade hemp milk works great and is simple!
- 1/2 cup chia seeds
- 2.5 Tbsp raw organic cacao powder
- Pinch of sea salt
- 1/2 tsp vanilla extract
- ~5 dried organic cherries pitted, soaked and drained
- 2 tsp acerola berry powder
- 20-40 + drops liquid stevia to taste OR 2-3 Tbsp coconut nectar
- OPTIONAL: 1/2 tsp ground Ceylon cinnamon Ceylon cinnamon
Instructions
- Add all ingredients to a high-speed blender and blend until smooth, about 1-2 minutes. Sweeten to taste with liquid stevia or other preferred sweetener.
- Allow to chill and thicken in the fridge for a few hours.
- Serve chilled or store in the refrigerator covered for up to 2 days.
Notes
Top with coconut whipped cream, cacao nibs, berries or other fruit and enjoy!
You can keep this recipe refined sugar-free by sweetening it only with the cherries and a bit of additional stevia to taste, keeping it free of refined and processed sugars but full of flavor.
While delectable and satisfying, this is a gluten-free, vegan chocolate pudding that is healthy enough you could even enjoy it for breakfast!
