Gluten-free granola is one of those recipes that is quick to throw together and provides many versatile and delicious uses so that it never lasts too long in our house!

Whether you have stuck to a gluten-free diet for many years, are starting to incorporate more gluten-free options into your diet or have a goal of trying out more healthy, real-food recipes this year, this granola will work for you! Making your own gluten-free granola will save you money and let you control the quality of the ingredients. As a bonus, it will fill your home with a yummy aroma as it bakes!

This freshly baked gluten-free granola is made with unrefined coconut oil and is naturally sweetened without refined sugars. The balance of healthy fats and protein from the pecans, pumpkin seeds and hemps seeds provide longer-lasting energy and help keep you satisfied, while the gluten-free oats give a boost of quicker energy.

I choose organic certified gluten-free oats (this post contains affiliate links) for a gluten-free granola and incorporate pecans, green pumpkin seeds and hemp seeds to add omega-3 healthy fatty acids with a rich, satisfying crunch. Pumpkin seeds are also great sources of zinc which supports our immune health as well as magnesium.

To lightly sweeten this granola without refined sugars, I use coconut nectarCoconut nectar comes from the sap of the coconut tree which is naturally sweet and contains 17 amino acids, minerals, vitamin C, B vitamins and other phytonutrients. This sweetener is low-glycemic (with an average GI of 35) and does not need refrigeration. With only 3 Tablespoons of coconut nectar in the whole batch, it remains low in sugar. The dried organic unsweetened blueberries also add a bit of sweetness as well as healthy antioxidants.

Instructions
 

  • Preheat the oven to 300F.
  • Mix together wet ingredients in a large glass bowl and stir to combine.
  • Add dry ingredients to the wet ingredients and combine well so that all dry ingredients are coated well.
  • Transfer to a coconut oil greased or parchment lined rimmed baking sheet and spread into an even layer.
  • Bake 8-12 minutes until golden.
  • Allow to cool on cookie sheet to harden into crunchy clusters.
  • Enjoy and store leftovers in glass container.

Notes

Enjoy this as a crunchy topping for nut cream, smoothies, fresh fruit and other treats. It is also great as a cereal with homemade coconut, nut or seed milk or yogurt!

If you prefer a chunkier gluten-free granola, use a smaller baking sheet to crowd the granola together more closely, while still allowing enough room for even toasting. Also, make sure to allow the granola to cool completely before removing it from the pan and breaking it up.

I like to store my homemade gluten-free granola in glass containers like mason jars. Enjoy it as a cereal with your favorite non-dairy milk or yogurt, as a mix-in for your favorite snack or trail mix, as a crunchy snack or a delicious dessert topping!
