Vegan Grain-Free Cranberry Cookies: delicious festive cookies without grains, gluten, egg, nuts or dairy and a sugar-free vanilla icing!
The festive season is here! At this time of year, one of our favorite treats is a holiday cookie. To avoid the common allergens in traditional holiday treats, I developed these Vegan Grain-Free Cranberry Festive Cranberry Cookies!

With a few simple swaps, you can do some holiday baking and create nourishing, delicious alternatives. These Vegan Grain-Free Cranberry Cookies with a Vanilla Drizzle are quick and easy to make yet festive and delicious for any holiday gathering! They are a healthy option which is suitable for a range of dietary needs and allergies.
Made without flour, my Vegan Grain-Free Cranberry Festive Cranberry Cookies are allergy-friendly, gluten-free, egg-free, nut-free, dairy-free, paleo and vegan. The coconut butter provides substance in place of flour, keeping them grain- and gluten-free.
You can enjoy these healthy cookies as a satisfying breakfast or snack or for a special festive treat or dessert when topped with the delicious vanilla drizzle! They are perfect to take to your next holiday party.
Coconut butter (also known as coconut manna) is made from finely ground coconut meat which has a consistency similar to nut butter. It is not the same thing as coconut oil, coconut cream or vegan butter made with coconut oil, so be sure to use unrefined, organic coconut butter or manna. The coconut butter provides natural flavor and a subtle coconutty flavor.
For an added touch, you can top these Grain-Free Cranberry Festive Cranberry Cookies with a sugar-free vanilla drizzle! Combine melted coconut butter with vanilla extract and liquid stevia for a subtly sweet icing topping without sugar!

I used organic fresh cranberries, finely chopped with a coffe grinder but you can also use dried cranberries for some festive color and wonderful flavor if you desire. Be sure to finely chop the cranberries to avoid crumbling of the finished cookie.
To keep these cookies vegan, I used a flax egg. To make a flax egg, soak 1/2 tablespoon of freshly ground flax meal (you can use a clean coffee grinder to grind whole flax seeds into a course meal) in 1.5 tablespoons of water. Stir together and allow to sit in the fridge for 30-60 minutes.
Be sure all your ingredients are at room temperature to ensure that the batter blends well. You will probably need to gently warm the coconut butter until it is very soft before adding it to the other ingredients. If the coconut butter is too cold, it will become solid and not blend well. I recommend using a gentle water bath to avoid burning the coconut butter.
Vegan Grain-Free Festive Cranberry Cookies with a Vanilla Drizzle
Ingredients
- ½ cup organic coconut butter/manna gently warmed
- 1 ½ Tbps coconut nectar or maple syrup
- ½ tsp organic vanilla extract
- 10 drops vanilla liquid stevia
- ½ Tbsp freshly ground flax meal + 1 ½ Tbsp water*
- ¼ tsp sea salt
- ¼ tsp baking soda
- ¼ tsp cinnamon
- ¼ cup unsweetened shredded coconut
- ¼ cup organic cranberries finely chopped
Instructions
- Preheat oven to 350F.
- Combine coconut butter, coconut nectar, vanilla extract, stevia, flax egg, sea salt, baking soda & cinnamon.
- Fold in shredded coconut and cranberries.
- Refrigerate batter for 10-15 minutes.
- Drop rounded spoonfuls of batter onto a baking pan (I prefer stainless steel) lined with unbleached parchment paper or greased well with coconut oil.
- Bake cookies for approximately 8-10 minutes.
- Remove from the oven. Cookies will be very fragile and crumble easily when warm so allow to sit for around 15 minutes on the pan before transfering to cooling rack.
- Drizzle with vanilla drizzle if desired.
- Enjoy!
- Store leftovers in airtight container.
Notes
1/3 cup Coconut Butter
8 drops liquid stevia (vanilla or plain)
1/4 tsp vanilla extract (if using plain stevia)
Gently warm coconut butter to melt and combine with vanilla and stevia.
Drizzle atop of cooled cookies.
