Tigernuts: The Grain-Free, Nut-Free Tuber
These Gingerbread Chai Spice Grain-Free Cutout Cookies are made gluten-free, vegan and nut-free thanks to the nutritious tigernut! I really value true nourishment and am always on the lookout for allergy-friendly, gluten-free options. So when I heard about tigernuts (affiliate link) I was intrigued to learn more and try these little tubers out for myself!
Tigernuts are small, wrinkled tubers (affiliate link) that grow just below the surface of the soil. They have been used as a source of nourishment for thousands of years and remain a traditional food in Spain and West Africa today. Archaeological evidence suggests that they were a common food source during the Paleolithic era in Africa and were later brought to Spain by the Moors. They may have been one of the earliest cultivated crops and were also found as “sacred roots” in the Pharaoh’s tombs. In these cultures, they are traditionally used in a variety of dishes including hearty stews and made into tigernut milk, also referred to as horchata in Spain and kunnu aya in Nigeria.
Although they look like little wrinkled nuts, these amber orbs are actually vegetables. They are soft in texture with a somewhat chewy and sweet nutty flavor. These tubers are rich in minerals including calcium, iron, magnesium, potassium and phosphorous as well as vitamins C and E. They contain the monounsaturated fat oleic acid which is also found in olive and avocado oil and is associated with healthy HDL cholesterol levels.
Tigernuts have traditionally been used as a folk remedy for digestive issues and supply prebiotics that feed the healthy bacteria in the intestines.
Since tigernuts are vegetables and not nuts, they are allergy-friendly for many. They are also gluten-free, grain-free, dairy-free, egg-free, paleo and vegan so they can be incorporated in many different ways of eating.

These yummy Gingerbread Chai Spice Grain-Free Cutout Cookies are made with tigernut flour (affiliate link) which offers a grain-free and nut-free cookie, which holds together well. Chia or flax seeds provide a vegan egg substitute, while warming chai spices add fabulous flavor and health benefits.
These spiced Gingerbread Chai Spice Grain-Free Cutout Cookies are gluten-free, paleo, vegan, dairy-free, egg-free, soy-free and nut-free, making them a delectable holiday treat for almost everyone, even those with multiple allergies!
Gingerbread Chai Spice Grain-Free Cutout Cookies: Paleo, Gluten-Free, Vegan, Dairy-Free, Egg-Free, Soy-Free, Nut-Free
Ingredients
- 2 cups tigernut flour
- 1/4 cup coconut flour sifted
- 3/4 teaspoon baking powder corn-free, aluminum-free
- 1 teaspoon Ceylon cinnamon
- 1/2 teaspoon ginger
- 1/8 teaspoon cardamom
- pinch of cloves
- pinch of nutmeg
- ¼ teaspoon salt
- 1/4 cup melted coconut oil
- 4 tablespoons coconut nectar
- 6.5 Tbsp unsweetened apple sauce/puree
- 1 teaspoon vanilla
- 1 chia or flax egg 1 Tbsp ground flax or chia seeds in 2.5 tbsp water, stir and allow to thicken for at least 5 minutes
- Sugar-Free Vanilla Icing
- 1/3 cup Coconut Butter
- 8 drops liquid stevia vanilla or plain
- 1/4 tsp vanilla extract if using plain stevia
- Gently warm coconut butter to melt and combine with vanilla and stevia.
- Spread warm icing atop of cooled cookies and allow to cool.
Instructions
- Preheat oven to 350 degrees and line a baking sheet with unbleached parchment paper or grease with coconut oil.
- In a medium mixing bowl, whisk together the dry ingredients (flour, spices, salt, baking soda, cream of tartar).
- Mix together the oil, coconut nectar, applesauce and chia/flax egg.
- Pour the wet mixture into the dry mix and blend with a wooden spoon to moisture all ingredients evenly.
- Roll out the dough and cut out with your favorite cookie cutters OR make into 1-inch balls and press down slightly with the palm of your hand to flatten the cookies. You may desire to chill the dough in the fridge if needed to make rolling easier.
- Bake for 8-12 minutes until the tops are firm and no longer wet and the bottoms are lightly golden.
- Cool on cookie sheet for 10 minutes, remove and cool completely on a baking rack. Store in an airtight container for 3-5 days

The simple and sugar-free icing is made my combing melted coconut butter with vanilla extract and liquid stevia for a subtly sweet, festive topping that add sweetness without sugar. - beet root powder for a pink tone
- turmeric powder for a lovely orange hue
- ceremonial grade matcha or chlorella for a pretty green tone
