No-Bake Gluten Free Chocolate Chip Trail Mix Bites {A Gluten Free, Vegan, Dairy Free, Nut Free, Soy Free Recipe}
Whether you are heading off on one last summer adventure or prepping the kids’ healthy lunchboxes for back-to-school, these Gluten Free Chocolate Chip Trail Mix Bites are the perfect treat to have on hand!
Packing a lunch for school or work can be a great way to make healthy choices and reduce non-nutritious temptations while also saving money! To help ensure focus, concentration and energy to get you and your child through the day, consider some of my favorite Simple | Pure | WholeTM tips for packing a healthy, non-toxic lunchbox!
These energy bites provide portion-controlled healthy nutrition in a easy-to-transport little ball. They are no-bake, so you can stay cool in the August heat with no need to turn on the oven. You can whip up a batch and keep them in the freezer, ready to pop into your backpack, grab for a quick breakfast or snack or pack into a lunchbox.

Gluten-free oats, allergy-friendly chocolate chips, shredded coconut and a variety of seeds provide a nutritious sweet, chocolately and savory combination, just like your favorite trail mix! They pack a good balance of carbohydrates, protein and healthy fat without too much added sugar to provide sustained energy without a crash. They are a welcome addition to any lunchbox or as a quick breakfast, dessert or snack. This recipe also makes a nice post-workout recovery mini-meal since it has a good amount of protein and is low in added sweeteners.
No-Bake Gluten Free Chocolate Chip Trail Bites
Ingredients
- 1 cup gluten-free oats
- 1/3 cup hemp hearts
- 1/3 cup raw pumpkin seeds roughly chopped or crushed
- 1/4 cup ground flax seeds
- 1/4 cup ground chia seeds
- 1/2 tsp Ceylon cinnamon
- Pinch sea salt
- 1/3 cup allergy-friendly mini chocolate chips
- 1/4 cup shredded coconut
- 1 tsp vanilla extract
- 1/2 cup + 1Tbsp hempseed butter
- or other nut or seed butter
- 1/3 cup coconut nectar
Instructions
- Combine dry ingredients in a large bowl.
- In a separate small bowl, mix seed butter, vanilla and coconut nectar to combine well.
- Stir wet ingredients into dry ingredients with clean hands or a large spoon.
- Cover mixture and place in fridge for 30-60 minutes.
- Roll ~1Tbps of the mixture into bite sized balls.
- Refrigerate or freeze in an airtight container until ready to enjoy!
Notes
To meet the needs of nut-free schools and accommodate those with nut allergies, I used hempseed butter which provides healthy omega fats and protein. I have also made these with sunflower seed butter or you can substitute any nut or seed butter that you prefer. These yummy bites are also gluten-free (be sure to use certified gluten-free oats), dairy-free (when you choose allergy-friendly, dairy-free chocolate chips) and soy free making them suitable for many allergy-friendly diets!
