Favorite Ingredient: Coconut Butter
If you regularly follow the blog, you may have noticed that one of my favorite ingredients is coconut butter! Not only does this creamy real food taste amazing, it adds satisfying healthy fats and can even act as a grain/flour substitute for grain-free paleo baking!
Coconut butter (also known as coconut manna) is made from finely ground coconut meat which has a consistency similar to nut butter. It is not the same thing as coconut oil, coconut cream or vegan butter made with coconut oil but instead consists of the whole ground coconut meat. It provides a subtle coconutty flavor which is great in baked goods and sweat dishes.
Coconut butter is also deeply hydrating for the skin and has anti-bacterial properties. It goes beyond moisturizing the skin and actually helps to heal it from the inside out since it contains antioxidants and saturated fats which are absorbed into the skin. The natural oils are great for healing dry, sensitive skin and leave your skin feeling silky and hydrated, especially in the dry winter months.
Simple Pure Whole Solutions:
Gluten-Free Vegan Coconut Butter Fruit Dip
Ingredients
- Coconut butter
- Liquid Stevia or maple syrup
Instructions
- Gently melt coconut butter over a water bath on low heat. Be careful, as it can burn easily.
- If you prefer more than the natural coconut sweetness, you can add a few drops of liquid stevia or a teaspoon of maple syrup.
- Drizzle over fruit or dip fruit into the melted coconut butter and serve!
- Enjoy a quick, satisfying hot drink to warm you up on a cold day by mixing up a mug of my 2-Minute Creamy Vegan Hot Chocolate which gets its richness from coconut butter!
- Try using coconut butter as a flour substitute in my Festive Vegan Grain-Free Cranberry Cookies! Coconut butter is also featured in the delicious sugar-free frosting which I used to top these cookies.

One of my favorite posts this month was where I shared my 5-step plan to Transition into the New Year with Ease! I have found that being able to consistently envision and set smart, realistic goals is a key to helping my clients and patients get the results and outcomes they desire for their health, happiness and life overall!
The New Year is a time when so many turn to resolutions and new goals. In fact, almost half of all adults make New Year’s resolutions, whether to shift small habits or make major life changes.
When approached correctly, this can be an effective strategy for making lasting, meaningful change. A Journal of Clinical Psychology study found that people who make resolutions are 10 times more likely to change their behavior than those who don’t.
The keys to success are targeting realistic goals, clearing any mindset blocks and negativity, and taking it one step at a time.
Healthy, cleansing seasonal produce may be harder to find in many areas at this time of year, but there are still plenty of delicious real food finds to choose from! Leeks are one such vegetable which stores well.
Leeks are allium vegetables which contain a unique combination of flavonoids and sulfur-containing phytonutrients, making them detoxifying powerhouses.
One of the flavonoids in leeks, kaempferol, has been shown to protect the lining of our blood vessels from oxidative damage. This supports cardiovascular health and blood flow.
The delicate and sweet flavor of leeks add a subtle touch to recipes with the overpowering onion flavor that you get with many types of onions. The flavonoids in leeks are most concentrated in the lower leaf and bulb portion which can be chopped and lightly sauteed with a bit of olive oil and lemon juice. Leeks are also delicious when braised, which brings out their natural sweetness.
Simple Pure Whole Solutions
- As with garlic and onions, you should allow chopped leeks to sit for at least 5 minutes before cooking to bring forth the greatest nutritional benefits.

- A simple way to prepare leeks is to braise them to bring out their natural sweetness. I like this simple Braised Leeks recipe from In Sonnets Kitchen.
