Black Forest Chocolate Chia Pudding {Vegan, Gluten-Free, Soy-Free, Nut-Free, Sugar-Free}

A thick, creamy pudding packed with real-food nutrition for the perfect snack, dessert or breakfast treat!

Ingredients
  

  • 1 1/4 cups unsweetened coconut or hempseed milk homemade hemp milk works great and is simple!
  • 1/2 cup chia seeds
  • 2.5 Tbsp raw organic cacao powder
  • Pinch of sea salt
  • 1/2 tsp vanilla extract
  • ~5 dried organic cherries pitted, soaked and drained
  • 2 tsp acerola berry powder
  • 20-40 + drops liquid stevia to taste OR 2-3 Tbsp coconut nectar
  • OPTIONAL: 1/2 tsp ground Ceylon cinnamon Ceylon cinnamon

Instructions
 

  • Add all ingredients to a high-speed blender and blend until smooth, about 1-2 minutes. Sweeten to taste with liquid stevia or other preferred sweetener.
  • Allow to chill and thicken in the fridge for a few hours.
  • Serve chilled or store in the refrigerator covered for up to 2 days.

Notes

Adjust the type and quantity of sweetener to your taste. Depending on the type of stevia and the level of preferred sweatness you desire, you may prefer to adjust the quantity.
Top with coconut whipped cream, cacao nibs, berries or other fruit and enjoy!
