Crispy Oven-Baked Coconut Cinnamon Sweet Potato Fries

Crispy oven-baked sweet potato fries with the flavors of sweet potato pie! They make the perfect side dish or snack.

- 2 large or 4 small sweet potatoes trimmed and cut into about 1/4 inch thick strips
- 3 Tbsp coconut oil
- 1/3 cup dried shredded coconut
- 2 tsp cinnamon
- 1 tsp ground ginger
- 1 tsp sea salt
- 1 tsp coconut sugar optional
Preheat the oven to 400F.
Place coconut, cinnamon, ginger, sea salt and coconut sugar if a sweeter fry is desired into a medium-sized bowl and whisk or stir to combine well.
Place sweet potato slices in a large bowl and pour coconut oil over them to coat well.
Pour coconut and spice mixture over the oiled sweet potato slices and toss well until all pieces are coated evenly.
Spread fries out evenly in a single layer on a baking sheet and bake for 15 minutes. Flip and bake another 5-10 minutes until the edges are lightly browned and crispy.
